The Craigellachie Hotel creates new dining terrace in upgrades ahead of reopening

A SPEYSIDE hotel has created a new outdoor terrace overlooking the Spey as it looks forward to welcoming back guests and locals this month.

The Craigellachie Hotel will reopen the doors of its Copper Dog pub and outdoor dining area on Monday, April 26, while accommodation will open from May 17.

The team has been working hard during the pandemic closure to upgrade the hotel inside and out, with the terrace providing seating for an additional 30 guests.

Newly appointed executive chef and general manager Will Halsall has also devised a new food offering, and says guests can expect an elevated menu showcasing local suppliers from across the region

Will has worked at some top London restaurants such as Le Caprice, 34 Grosvenor Square and The Ivy.

He said: "Our team can’t wait to reopen the doors and welcome locals and visitors alike back to The Craigellachie.

"We are also pleased to be offering a brand new food and drink menu from Copper Dog’s bar and kitchen featuring the very best of Speyside’s larder which can now be enjoyed on our new terrace overlooking the banks of the River Spey.

"A big reason behind Speyside becoming the world’s largest whisky-producing region is its micro climate and being one of the driest places in Scotland.

"This means we have some of the best food produce too, working with local suppliers, from Sutherlands of Portsoy seafood, to locally-grown vegetables from Speyfruit and beef from Aberlour’s S A Mackie Butchers.

"Our team has gone through vigorous training in preparation for reopening without compromising our friendly, home-from-home experience and we look forward to welcoming everyone back."
