Edinburgh Castle (Walker's style) goes on display at Aberdeen Airport

This tasty replica of Edinburgh Castle contains no fewer than 2933 pieces of Walker's shortbread and is greeting visitors to Aberdeen.

The structure, made entirely of shortbread has taken up residence at Aberdeen Airport till the end of October and was constructed by renowned UK food artist, Prudence Staite.

Located past airport security, it will reach over 223,000 tourists departing from the airport as part of a new pop-up visitor experience which has been created in response to increasing demand from travel and tourism for heritage products, with sales of Walker’s Shortbread in airports rising by 150 per cent in the past year.

Further retail additions at the airport this week include a new WHSmith and Costa Coffee shared space store.

The unit at Aberdeen International Airport was previously run as a café pre-pandemic and became the terminal’s temporary Covid Testing Centre for passengers who required testing for arriving and departing the country.

The new store is the first within a UK airport to combine a franchise operated Costa Coffee café and WHSmith, offering great coffee and a welcome space to relax with the convenience of being able to shop news, books and travel essentials for your journey and around 10 jobs have been created with the store’s opening.

The pop up experience meanwhile has Scottish heritage at its core and travelled to Aberdeen, from its previous location at Edinburgh Airport.

"It is a very busy period at the airport as the city welcomes business executives attending the SPE Offshore Europe event - we're sure our shortbread experience will delight them as they head home, with room in their suitcases for a delicious reminder of Scotland!”
