Team from Banff butchers go to war in new competition

A duo from a Banff butchers took part in one of the industry's most fiercely contested competitions.

Doing battle in the showcase finals of the UK's first Butcher Wars were Scott Gillies and Ryan MacGillivray from John Stewart Quality Butchers.

Run by Scottish Craft Butchers as part of their biennial Trade Fair in Perth, the Scotch Lamb PGI sponsored event attracted top talent from all over Scotland and south of the border.

The duo was one of 12 teams taking part in the pairs competition where they were up against the clock and some of the country's most experienced butchers in a 45-minute challenge.

The wars challenged butchers to break down a half saddle of specially selected pork and a half Scotch lamb to create a show-stopping display.

Each was judged on a raft of criteria including their personal appearance, butchery skills, food safety, wastage, creativity and health and safety.

Although they did not win, both butchers agreed it was "tremendous" to be part of the first ever Butcher Wars in Scotland.

Shop manager Mr Gillies (27) and assistant manager Mr MacGillivray (23) relished the experience of competing on the national stage and learning from some of the best in the business.

Mr Gillies said: "We have never entered any meat skills competition before and this groundbreaking event seemed like the time to put ourselves forward and give it a go.

"We have worked together for six years so were happy to compete together in what was a fantastic showcase for Scottish butchers, their skills and products."

Renowned international judge Keith Fisher headed up the day's judging team, praising the standard of skill and innovation on display.

He said: "I judge competitions all over the world and it is always a pleasure to see the highly skilled butchers of Scotland in action.

"The Butchers Wars have brought out the best in an impressive and exciting display to thrill both judges and audience and I am in no doubt that the future of Scotland's local butchers is in safe hands after seeing them in action."
